Monkey Bread



Ingredients
1/2 cup Brown Sugar
2 sticks of butter (1 cup)($0.75)
Bundt Cake Pan
2-3 teaspoons Cinnamon
3 cans of Buttermilk Biscuits (the non-flaky ones)($1.25 each)
1 cup Sugar

Total = $4.50

Directions
Preheat oven to 350
Cut each biscuit in to quarters. In a quart Ziploc bag put your sugar and cinnamon. Put all quartered biscuits in the Ziploc bag and shake to mix. All pieces should be coated (you might have left over sugar/cinnamon left). Empty your biscuits into the Bundt Pan. Heat butter and brown sugar together. Pour mixture over the biscuits (may be a little soupy - that is ok). Place in oven for 30-40 minutes until the outside forms a crust. Let cool 15-20 minutes and turn over and enjoy!

Cinco de Mayo Dip


Ingredients
1 pkg cream cheese (I use 1/3 less fat)($1.22)
1 pkg taco seasoning ($0.33)
1 can black beans (rinsed) ($0.59)
1 can rotel ($0.79)
1 cup shredded Mexican cheese ($0.99)
Bag of Tortilla Chips ($1.88)

TOTAL COST = $5.80

Directions
Let cheese set out for about an hour to soften. Mix the taco seasoning in with the cream cheese. Spread the cream cheese at the bottom of your serving bowl. Rinse your black beans and layer them on your cream cheese. Drain the rotel and layer on top of the black beans and top off with shredded Mexican cheese. Serve with Tortilla Chips

**Review**
We had this tonight at our Cinco de Mayo party and there were lots of people who like it. There were several comments that it had a 'kick' to it. I will make this again!

Southwest Eggs

Ingredients:
4 eggs (I use 1 cup of Better 'n Eggs) $0.63
3 asparagus spears
2 ounces of cubed turkey (ham, bacon or turkey can be substituted) $0.41
1/3 bell pepper (red, yellow, orange or green) $0.33
2 button mushrooms
Salt/pepper to taste (I use Mrs. Dash Southwest Chipotle seasoning)

Directions:
Spray skillet with non-stick spray. Dice vegetables and saute until tender, but crisp. Add turkey and eggs. Cook thoroughly. Top with a sprinkle of your favorite cheese!

**Review**
Tasty and filling breakfast dish. A great source of veggies and protein! Add an english muffin or piece of toast to make a complete breakfast.

Hot Ham & Turkey Sandwiches

Ingredients
2 - rolled pie crust (comes in fridge section by the rolls) ($2.69)
Deli turkey slices ($1.61 @ $2.99/lb)
Deli ham slices ($1.61)
Swiss Cheese (I used provolone because that is what we had) ($2.89)
Honey Dijon mustard (omitted in mine)

Directions
Preheat over to 400. Lay the pie crust out and put 3-4 slices of ham and 3-4 slices of turkey, and 2-3 slices of cheese in half of it. **If you are using Dijon mustard, drizzle that have with honey Dijon mustard** Close into half circle by pinching the sides up. Repeat with the other crust. Drizzle each with olive and bake for 20-25 min.

This was submitted by a friend and her husband and kiddos both like it. My daughter said it was really good as well as I enjoyed. This is another super fast dinner!!

Pizza Boats

Ingredients
Hamburger Buns or Rolls ($1.89)
1/3 jar of Pizza Sauce ($.30)
Pepperonis ($1.33)
2 cups Mozzarella Cheese ($1.48)

Directions
Place buns open side up. Spread spoonful of pizza sauce on top. Sprinkle with cheese. Add pepperonis on top.
Warm 350 for 8-10 minutes, until cheese is bubbly!

Makes 16 servings at $0.31 per serving.


**Review**
I admit, I was didn't know what to expect when I found this recipe but thought it was worth a try! It turned out very well!! It reminds me of making pizza with french bread but in individual servings. My daughter liked it as well as my husband. This was a quick make that would be perfect for a busy week night! I will make this again!
